A Better-For-You Chocolate Chip Cookie! YUM

My 91-year old mother loves these Better-For-You Chocolate Chip Cookies. They're a favorite for her breakfast too.

Start with Bittersweet Chocolate Morsels, (the real chocolate, dark ones)

Preheat oven to 350 degrees

In large mixer bowl combine & beat until creamy:

  • 1 cup (2-sticks) of butter, softened
  • 3/4 cup organic cane sugar
  • 3/4 organic brown sugar

Add one at a time & beating well:

  • 2 large eggs
  • 1 tsp real vanilla

In a separate bowl combine as follows, stir with spoon or folk until evenly mixed:

  • 1 cup organic flour (can use a GF blend)
  • 1 cup Lady Jane Hemp Flour or Hempagizer Protein Blast
  • 1/4 to 1/3 cup ground flax meal
  • 1 cup whole grain old fashion oats
  • 1 teas baking soda
  • 1 teas salt

Gradually add 1/3 to 1/2 flour mixture to butter mixture at a time, blend.

Once well blended ADD by stirring in: (since I have a paddle mixer, I'm still able to use my mixer to blend at this point, as the mix get rather stiff to work with.)

  • 1 cup chopped walnuts
  • 10oz bag of BitterSweet Dark Chocolate Chips

Drop by rounded teaspoon to tablespoon (whatever size you prefer) on cookie sheet. Bake at 350 for 9 to 12 minutes. We like crunchy cookies so we go close to 12 minutes. Cool on wire rack.

The difference in Lady Jane's Hemp Flour compared to the Hempagizer Protein Blast is the amount of fiber to the protein. I used either, depending on what I have on hand. These yummy cookies are a boost of protein, fiber, magnesium and iron. Good any time of the day!
