These delicious no-bakes are an outstanding holiday treat! Plus they can be made days, even a week or two ahead as the flavors will enhance.
In separate bowl mix together / set aside:
2 cups Lady Jane Toasted Hemp Seeds w/Sea Salt
1 cup unsweetened organic coconut
2 cups chopped dried cherries*
Place in a 3-quart sauce pan:
1 cup organic cane sugar
1/2 cup coconut oil (or dairy free butter substitute)
1/2 cup organic coconut milk beverage
½ Cups dark cocoa powder **
2 tsp vanilla extract
1. Mix together sugar, butter, coconut milk and cocoa in 3-quart saucepan. Bring to a boil over low heat and boil for 6 to 8 minutes, stirring constantly.
2. Remove from heat and add vanilla.
3. Stir in dry mixture of Jane’s Toasted Hemp Seeds, coconut & chopped cherry mixture. Mix well by hand.
4. Drop by spoonful on waxed paper. Let cool, refrigerate.
(*dried cranberries can be used)
**cacao has many nutritional benefits verses cocoa, when using cacao, it’s best to not mix with any dairy products as the nutrition is compromised.
