Summer Yellow Squash Delight

This can be a complete meal or side dish. It's GF and vegetarian. Can easily be converted to vegan.

• 2 Tbsp Butter
• 1 Large White or Spanish Onion Sliced
• 3 to 4 Small Yellow Summer Squash and/or Zucchini sliced 1/4 to 1/2 thick
• ½ cup fresh grated Parmesan Cheese
• 2 to 3 teaspoons Ground Ginger
• Ground pepper
• 1 Tablespoon GF Soy Sauce
•  Approximately ½ to 1 cup Lady Jane Hemp Hearts

1. Melt butter in large skillet over low heat.
2. Add in onions and sauté on low for few minutes until tender & clear.
3. Add, ground ginger, ground pepper and soy sauce to sautéed onions. Stir until evenly distributed.
4. Add in the sliced squash or zucchini and cover the skillet. Simmer on low for 3 minutes.
5. Remove lid, quickly add fresh grated Parmesan cheese to top and sprinkle on some black pepper. Replace lid simmer about 30 seconds until cheese melts. Remove from heat,
6. Dish the squash onto plates and put 2 – 3 TBSP of Lady Jane Hemp Hearts on each serving.
