Lady Jane's Chocolate Cherry Hemp Bites! A good-for-you, NO-bake, chocolate, comfort food snack. Made with Michigan dried Cherries. These are always a big hit when served. Easy, good protein and excellent fiber. Meets vegan lifestyle diet plans too. These tasty nips are even better days later once the cherries have enhanced the flavor.
Mix together in a large bowl (3 to 5 qt size) / set aside:
Place in a 3-quart sauce pan:
- 1 cup organic cane sugar
- 1/2 cup coconut oil (or dairy free butter substitute)
- 1/2 cup organic coconut milk beverage
- ½ Cups dark cocoa powder (cacao)*
- 2 tsp vanilla extract
1. Mix together sugar, butter, coconut milk and cocoa in 3-quart saucepan. Bring to a boil over low heat and boil for 6 to 8 minutes, stirring constantly.
2. Remove from heat and add vanilla.
3. Stir in dry mixture of Jane’s Toasted Hemp Seeds, coconut & chopped cherry mixture. Mix well by hand.
4. Drop by spoonful on waxed paper. Let cool, refrigerate. (*dried cranberries can be used)
Storing in the refrigerator. These cherry chocolate no-bakes can be made several days, even a few weeks ahead as the flavors will enhance after the cherries and chocolate have rested together for a few days. Enjoy!
** VARIATION: For a little less crunch, you can use 1 cup Lady Jane Hemp Hearts with 1 cup of Lady Jane Toasted Hemp Seeds with Sea Salt.
Time Safer – press mixture into a 9 X 13 greased pan and cut to desire sizes once mixture sets
